Red potatoes are small to medium in size and are round or oval with a somewhat uniform shape. The thin skin is ruby to deep red and is smooth with some light brown speckling, spots, and indentations. There are also a few medium-set eyes found across the surface of the skin. The flesh is crisp, white, and firm. Red Potatoes have a thinner skin and a subtle, sweet flavor. Their waxy texture helps them stay firm throughout cooking, making them ideal for stews, soups and salads. They roast beautifully and are a colorful addition as a side dish.
